May 23, 2012— Food lovers, culinary experts and chefs from across the country convened in Monterey, California last week for Monterey Bay Aquarium’s Cooking for Solutions, a premier event celebrating the use of sustainable food. Zephyr Cove Resort’s own, Chef Rory Bancroft joined the ranks of featured chefs and some celebrity chefs, including the event’s celebrity chef host award-winning Napa Valley chef and restaurateur, Cindy Pawlcyn.
The event set the stage for Chef Bancroft to showcase his culinary talent during the Meet the Chefs Reception on May 17 at the Aquarium where he presented his Shrimp and Blue Crab Etoufée. The location was ideal as Monterey Bay Aquarium is a beacon when it comes to educating the public about the importance of protecting the environment and natural resources. This deep respect for the environment coupled with an exceptional culinary experience is what makes Cooking for Solutions widely regarded as one of the country’s finest sustainable food festivals.

Rory’s desire to work local flavors and fresh produce into his cooking has been a longstanding passion. After culinary school, his tenure at the Bay Harbor Yacht Club on the edge of Lake Michigan opened his eyes to what was available. Between fish caught the morning it was served and pounds of chanterelle mushrooms picked the day they became part of his dishes, Rory learned the true measure of freshness. After years of developing seasonal menus for ARAMARK clients at the iWireless Center in Illinois, he joined the Tahoe team and was thrilled to attend his first Cooking for Solutions this year.
